I've just moved into a new flat and would like a bit of help with the
phone wiring if anyone would be willing.

1 is probably a block terminal connecting the black external
cable to white internal. As you said in the PS, the master
socket must be behind the cupboard. I guess it was there
first, but it's not a very sensible location, since it's
your point of demarcation with the network, and needs to
have access for testing. It would be best to shift it.
Why would you want a RJ45? ADSL modems/routers normally
have a cable with BT plug and/or RJ11 (4-way). Having said
that, it shouldn't do any harm to replace a secondary
extension outlet with a RJ-style one, and a RJ11 plug will
fit into a RJ45 outlet, even though it's larger.
The NTE5 is a master outlet - it shouldn't be used on a
secondary outlet, or have I misunderstood your purpose? Are
you talking about 2 separate phone lines?
If you want the ADSL terminal at 2 and telephones on 3-4-5,
you could filter the socket 3 wiring at the master and
connect the outlet 2 wiring to the unfiltered line. If
you're not sure how to do this, just leave wiring as it is
and use filters on 3,4 and 5, as required.

That should work, if I've understood you correctly. Probably easiest
to isolate 4 & 5 by disconnecting at 3, assuming it is daisychained in
the way you show.
If you want to use a voice telephone on 2, it'll need a microfilter,
either another NTE5 faceplate, or a plug-in.
