Because in many news readers, that will break the thread and your
message will appear on its own, totally out of context.

when you change the subject line, people might not catch any further posts made
to the topic, because they're looking for a different post title. it makes
carrying on a discussion in a single thread a bit more difficult and ultimately
ends up in someone making a bunch of different threads on the same topic
because they don't get replies to their original one (because the subject line
was changed)
